Roberto Silla Castagneri, chef at Ristorante Silla, bases his philosophy on these principles: bringing back to life authentic regional popular cuisine and telling its story through some of its most celebrated dishes.
Seasonality and respect for ancient traditions are the foundation of Ristorante Ala's cuisine. Roberto's signature dishes are undoubtedly Piedmontese-style mixed fried meats, boiled meats, and bagna caoda; dishes featuring local game are also highly appreciated. In autumn, lunches and dinners featuring mushrooms, especially porcini, are recommended.
In winter, thanks to the organization of guided snowshoe excursions in the area, the restaurant becomes the delicious final stop of a day spent in nature.
During the warmer months, however, a lunch in the garden is a must, enjoying the splendid panorama of the peaks of Val d'Ala.
